I made enchiladas verdes tonight based on a few tips from Amazing Alison. I'm sure they're hotter than molten lava right now, so I'm posting a pic of them to my blog of course!
Oh and I am LOVING your blog. LOVE that your posting pics, LOVE your About Me, LOVE that your hubby is the Captain here too, loving everything! Special K is loving it too... he really liked all your pics from the fair. Cute, cute!
Thanks! I could not have done it without you! I got the tortillas at costco, 3 24 packs for 2.50. Crazy! Your tip about softening them in the enchilada sauce worked great. No frying necessary...now they are low cal if you don't count the 5 handfuls of cheese. Let me know if you need a care pack of tortillas :)
